Quick & easy Scones

I recently went for a high tea at "The Tea Room at Crabtree & Evelyn" in Design Quarter in Fourways. My friends and I had the most delicious scones, jam and clotted cream. It was oh so heavenly! This inspired me to make some of my own scones at home; I was going through some of the old recipes that my mom had handed down to me and came across this one…the ingredients seemed simple enough and I had about 30 minutes to kill.

What you will need is the following:
·         2  cups of cake flour (sifted)
·         4 tsp of baking powder
·         pinch of salt
·         2 tbps sugar
·         80 ml of oil
·         1egg
·         125 ml of milk

Method;
1.      Mix the dry ingredients together
2.      in a separate bowl; mix the egg, milk and oil.
3.      add the wet ingredients to the dry and mix well

·         Make 12 balls out the mixture and place them into the 12 muffin tray, pat them lightly to make them flat.


·         Place the muffin tray in a pre-heated oven at 180̊ c for 10-15 minutes.
·         Makes 12 scones.
